It's all about sourcing at Organika, where everything is not necessarily organic but rather follows the locavore trend of emphasizing local and sustainable products. The carbon footprint is a bit heavier with a couple of artisanal cheeses shipped from Italy and various wines shipped from around the globe (most of them organic). Sicily gets a nod with spaghetti alla puttanesca and rigatoni alla Norma with eggplant, tomato sauce, basil and ricotta salata. Chef Melissa Muller makes a variety of lovely salads, bruschetta and pizza, served in a small, tastefully decorated West Village café whose wooden tables are preset with blue-tinted glassware that catch the light.
